Alubias (serves 4)

Ingredients:
1 x butternut squash
Some Spanish honey
100g x grated cheddar cheese
2 x garlic cloves
Olive oil
Rosemary
Thyme

Method:
1. Peel the butternut squash and then cut into 2cm cubes
2. Place on roasting tray and drizzle with olive oil
3. Throw the garlic and rosemary, season with salt and pepper then simply stir it all in.
4. Roast in the oven for 35 minutes. Remove and serve into tapas dishes
5. Drizzle plentifully with Spanish honey and grated cheddar cheese then place back in the oven for a further 2 or 3 minutes (until the cheese has melted!)
5. Serve with a chunk of crusty bread
