Cold Lentil Salad (2 servings)

Ingredients:
100g x green lentils
1 x roasted red pepper
A tablespoon of white wine vinegar
¼ of a white onion chopped
1 x garlic clove finely chopped

Method:
1. Boil the lentils for 25 minutes then drain and rinse
2. Season with salt and pepper and a dash of olive oil
3. Mix in the vinegar, onion and garlic
4. Leave to cool then serve
